A good braai marinade turns ordinary meat into something unforgettable — and the right fire seals the deal. Here is how to marinate like a pro, plus the braai wood that gives your meat that authentic South African flavour, delivered anywhere in Cape Town by Limpopo Hardwood.
What Goes Into the Perfect Braai Marinade
Every great marinade has three parts: oil to carry flavour and keep meat moist, acid (vinegar, lemon juice or yoghurt) to tenderise, and seasoning — spices, garlic, herbs. Our range of Rooibaard sauces and braai spices covers all three in one bottle.
How Long Should You Marinate?
- Chicken: 2–12 hours. Any longer and acid turns the texture mushy.
- Beef and lamb: 4–24 hours for steaks and chops; up to 48 hours for tougher cuts.
- Pork: 4–12 hours.
- Fish and seafood: 15–60 minutes only.
Always marinate in the fridge, never at room temperature, and never reuse a raw-meat marinade as a basting sauce — make extra and keep it separate. Try our Rooibaard Premium Basting for the final brush.
The Fire Matters as Much as the Marinade
A marinade caramelises properly only over steady, even heat. That is why serious braaiers use dense hardwood like Sekelbos, Rooibos, Soetdoring and Swarthaak — it burns hotter and longer than softwood or briquettes, and adds a smoky flavour no gas braai can match. We stock all four in bags from 7kg right up to bulk loads of 1000 pieces.
